In Sicilian we call this “ Milinciani Ammuttunati” ( buttoned up eggplants). In Sicily we use a kind of eggplant called” Tunisian “ here we use “Japanese eggplant”. We cut slits into it and we stuff it all with chopped garlic and parsley, min and basil, in some parts of Sicily we add anchovy past to it all.
