Sausage and White Bean Soup with Collard Greens. This soup has been on my site for so many years but as a slow cooker version. Making it on the stove with cooked white beans takes so little time, I do it this way more often. You can use precooked sausage or remove sausage from the casing in bite size pieces or use plant-based sausage. Just FYI, if you buy chicken or turkey sausage because you don't eat pork, it's almost always in pork casings so read your labels. I love the seasonings in sausage
